Egg in the Hole

Egg in the Hole as the name suggests a sunny side egg in a bread hole baked or cooked on stove-top. As I have mentioned in my previous posts we (me & hubby) love eggs to be part of our diet. This recipe is easy peasy & also scrumptious for a breakfast. I have used white bread in this recipe but you can make this delicious breakfast with any bread of your choice. I have shared both baked & stove-top methods here. My favorite is stove-top because of it's simplicity.
Prep Time-5mins 
Cook Time-15mins 
Serves-2people
Ingredients
4Bread slices {Any kind}
4Eggs 
1/2Cup shredder cheese
Oil or butter
Salt & pepper as needed
Directions
Baked Version 
- Pre-heat oven @350F. Spray a baking sheet with oil & keep aside. 
- Cut bread in a desired shape by using a cookie cutter of your choice. The ideal cutter would be a round one & used the same. 
- Now lay the bread slices on the baking sheet. Break open egg in one bread hole & repeat the same with rest of the eggs. 
- Egg white does skid out a little, place the baking sheet in oven right away you finished filling the holes. 
- Bake for 10mins & remove out of oven. By now eggs are set in place & now evenly sprinkle salt, pepper & cheese on them.
-Bake for another another 5mins or till the cheese is settled on bread. This will set the yolk too.
- Remove from oven. Cool it on counter top & serve it.
Stove-top Version 
- Heat a pan & add a dollop of butter to pan. 
- Place cut bread on pan & break open a egg in to the hole. Cook it for few seconds till the egg white is set. Flip bread & cook for few seconds. With this the yellow won't be runny & will be set perfectly.
- Now reverse the bread. Sprinkle salt, pepper & cheese on bread. Allow cheese to melt & it hardly takes seconds for cheese to melt as the bread is already hot enough.
- Once the cheese is melted remove bread from pan.
- Repeat the same with rest of the bread slices & eggs.
-Serve warm & enjoy the healthy breakfast.

Egg Fry

Egg Fry is a easy side dish. This protein packed dish can be a served as appetizer, side dish & also as snack. Eggs are perfect for any kind of meal. On lazy days & when I have no company for lunch this fry is to my go as it is filling & tasty.

Prep Time-5mins
Cook Time-10mins 
Serves-3people
Ingredients 
6Eggs boiled & peeled
1Small onion sliced 
2Tsp red chili powder {Adjust as needed} 
1Tsp turmeric powder
Salt to taste 
1Tbs oil
1Tbs lemon juice {Optional}
Few spring onions to sprinkle {Optional}
Directions 
- Slice eggs vertically as seen in picture & keep aside.
- Heat pan with oil. To that add in sliced onions & fry them translucent. 
- Next add in sliced eggs to pan. Arrange nicely without disturbing the yolks. 
- Sprinkle turmeric, chili powder & salt to pan. Fry them on each side. You should see little blisters on each side of eggs. 
- Switch off heat. Sprinkle lemon juice & spring onions to fried eggs. Mix them well. 
- Egg fry is ready to serve. 
Note
- Onions, lemon juice can be excluded from the dish.

Egg Pulusu | Kodi Guddu Pulusu

Egg Pulusu

Egg Pulusu is spicy tangy dish from Andhra Pradesh. Gravy for this dish is simple & very basic. Eggs are the star of this dish & when you use a fried egg the texture of it will make this dish much tempting. 


Egg Pulusu
Prep Time-10mins | Cook Time-30mins | Serves-2people
Ingredients
4Eggs boiled
1Onion finely chopped
1Tomatoes chopped
2Garlic cloves sliced
2Green chili's sliced half
Few curry leaves
1/2Tsp turmeric
1Tsp Red chili powder {Adjust as needed}
1Tbs Tamarind pulp
1Tbs pulusu powder { Use coriander cumin powder}
1&1/2Cup water
1/2Tsp sugar
1Tbs oil
Salt to taste
To Fry Eggs 
1Tsp oil
1/4Tsp turmeric
Seasoning
1Tbs oil
1Tsp jeera
1Tsp mustard seeds
2Red chili's cut equally
1/2Tsp hing {asafetida}
Few curry leaves
Egg Pulusu
Directions
- Heat pan with 1Tbs oil. 
- Add garlic & onion to pan. Fry for few seconds. 
- To the pan add tomatoes, green chili & curry leaves. 
- Close it with lid & cook till tomatoes are soft. 
- Mean while heat pan with 1Tsp oil. Add turmeric & boiled eggs to pan. Fry them on both sides to light brown.
- Once tomatoes are soft add water, tamarind, pulusu powder, turmeric, sugar & salt.
- Check salt & spiciness in the dish. Add chili powder as needed. 
- Slit fried eggs in the middle & drop them in to tamarind gravy. Bring gravy to boil & keep cook it for another 5mins. Switch off heat.
- Heat a small pan with oil. 
- To that add mustard, jeera & red chili's. 
- Once the mustard jumps add hing & curry leaves to pan. 
- Switch off heat & add seasoning to pulusu.
- Serve it with rice & a dollop of ghee.
Note
- Ignore the pulusu powder if you want to. 
- Gravy should be little thick & shouldn't be like watery.

Omelette in Mug

Omelette in Mug

Omelette in Mug - Yes, you read it right. I made an omelet in mug & it was awesome. I came across this recipe in a food site & decided on trying it. I like the traditional way of making omelet but, this way it reduces the make time & less messy too.
This omelette is made of egg whites, but you can also use a whole egg if you like. Egg whites are filled with protein & I love getting protein through food rather than powders. I avoided using oil in this dish & off course you are free to use it. If you want to use oil, grease the mugs with some oil as needed. Using a microwave simplifies & takes less time in cooking. In this dish we microwave it for just 2minutes & the omelette is ready.

Omelette in Mug

Prep Time - 5mins | Cook Time-2minutes | Serves-2people 
Ingredients 
5Egg whites
1/2cup finely chopped onions 
1Tsp red chilli powder {cayenne pepper}
pinch of turmeric
1/4Tsp garam masala powder {optional} 
Salt to taste
Few coriander leaves to garnish
Directions 
- In a bowl add above ingredients other than coriander leaves. 
- Mix them well. Adjust salt & spiciness if needed. 
- Take 2mugs & fill them up half the way. 
- Now microwave it for 1minute.  Take it out & mix the ingredients. 
- Now microwave for another 1minute.
- If you find any liquid then microwave again.
- Garnish with coriander & serve. 
Note
- Microwaving time varies with instrument. Adjust time as needed. 
- You can add veggies if you like. 
- Always use bigger mug. 
- Grease the mugs if you like to. 
- You can use whole egg with out discarding yellows.

Jadoh {Khasi Pulao}

Khasi Pulao

Jadoh is a rice dish which is mild in flavor & taste. It slightly resembles pulao/pilaf but with out much of spices. This Meghalaya dish, originated from Khasi region is traditionally a non-vegetarian one & I tried making it almost authentic & vegetarian. 


Khasi Pulao
Prep Time-5mins | Cook Time-30mins | Serves-2people
Adapted From: Indian Recipes
Ingredients
2Cups basmati rice 
3Cups + 2/3Cups Water
2Carrots chopped
1Medium onion
1Tbs ginger paste
1/2 Tsp turmeric
2Tbs black peppers powdered
5 Bay leaves 
1Tbs oil + 1Tbs ghee
1/4Cup mint leaves
Salt to taste
4Boiled eggs {optional}
Coriander for garnish
Directions
- Heat pan with oil + ghee. Add bay leaves, onions & ginger to pan. Saute for few seconds till the raw smell of ginger goes off. 
- To the same pan add carrots, turmeric & black pepper powder. Cook for 1min & switch off heat. 
- Wash rice with lots of water & to that add the cooked masala along with water.
- Mix enough salt & mint leaves to cooker. Taste & adjust salt if needed. 
- Cook rice as per your convenience. {Pressure cooker, electric cooker & stove top}
- Once rice is done garnish it with cilantro & boiled eggs. 
- Serve it along with a gravy dish of your choice. 
Note
- You can use any choice of short grained Indian rice in place of basmati.

Goan Egg Drop Curry

Goan Egg Drop Curry

Goa is a smallest state of India. Goa is surrounded with beautiful beaches, which make it a famous attraction world wide. I'm sharing a dish which is a typical goan style dish made of eggs & it was just awesome. I chose it because it's hard to find a meatless dish & also we (me & hubby) love egg curries. 


Goan Egg Drop Curry
Prep Time-10mins | Cook time-30mins | Serves-2People
Recipe Courtesy - Goan Food Recipes 
Ingredients
4Eggs
1Onion chopped
1Tomato chopped
2Garlic cloves chopped
1Tbs oil 
1Cup water
1/2Cup coconut milk
1Tsp chili powder
Salt to taste
Coriander leaves for garnish
For masala paste 
6Red chilis 
1Tsp cumin
1Tsp coriander
1Tsp fennel 
2Tbs grated coconut
1Tsp tamarind pulp
water
Directions 
- To start grind all the masala ingredients to smooth paste by adding little water.
- Now heat a pan with oil. To that add onion & chopped garlic. 
- Cook onion to translucent & to that add tomatoes & cook them till they are done.
- Now add the masala paste to pan. Stir fry till the masala becomes thick.
- Add water, salt & chili powder to pan. 
- Now break one egg at a time directly in to pan while keeping a distance from one another. 
- Close it with a lid & cook till the eggs are cooked perfectly. 
- Now add coconut milk to pan. stir slightly to cover up the eggs. Adjust the taste if needed. 
- Cook curry on a low heat until it becomes thick. Once it's done switch off heat & garnish with coriander leaves. 
Note: 
- If you feel this curry is too spicy then omit adding 1Tsp chili powder at last. 
- The color of this curry should be red & I believe the red chili's are at fault for not getting the color.

Mini Omelette | Omelette Paniyaram


Omelette

Mini omelette are yummy little omelette's which can be enjoyed as appetizer's or as a snacks. I wanted to make this dish healthy & made of mostly with egg whites & a small amount of yolk. Any addition of vegetables or spices makes this omelette more flavor.


Omelette
Prep Time-10mins | Cook Time-10mins |Yields-6mini Omelettes 
Ingredients
3 Large egg whites 
1 Whole egg 
2 Tbs sun-dried tomatoes chopped
1/2 Cup diced onions 
4 Green chili's chopped
1 Tbs oil
Salt
Directions
- Whisk all the ingredients in a bowl other than oil in a bowl. 
- Heat a mini pancake pan or paniyaram pan with little oil in all the rounds. 
- Half fill the rounds with egg mixture.
- Cook them in medium heat for 3 mins or until they nicely done on the other half. 
- Rotate them with a spoon & allow the other side to cook for another 3mins.
- Switch off heat & remove them.
Serve them with rice or along with ketchup.

Omelette

Note:
- Replace egg whites with 3 full eggs.
- You can replace sun dried tomatoes with veggies like carrots, scallions...etc.
- Green chili's can be replaced with red chili powder.

Kimchi Egg Drop Soup

For this weeks blogging marathon I'm showcasing " Soups & Salads". Today I'm sharing a healthy soup made of egg whites. Check this Blogging Marathon page for the other Blogging Marathoners doing BM#38.
Kimchi Egg Drop Soup

Kimchi egg drop soup is packed with nutrients & proteins that we need on a daily basis. The soup tasted delicious with fermented juices of kimchi & the broken egg whites. I made it with left over cucumber kimchi I made few weeks back. You can replace this with a store bought or any home made kimchi


Kimchi Egg Drop Soup
Prep Time-10mins | Cook Time-20mins | Yields-2servings
Ingredients
1cup kimchi
3cups water
1Tbs tomato paste or 1 tomato pureed
1/2Tsp red chili pepper (Optional) 
1Tsp sugar 
salt
1egg 
Few scallions & grated carrots for garnish
Directions
- Take a vessel with water & to that add kimchi.
- Along with that add tomato paste, chili powder, sugar & salt.
- Bring it to boil & cook for 15mins or till the veggies are done. Adjust the salt, spiciness & sugar if needed.
-Now separate the egg whites in to a bowl. whisk it with a spoon & add directly to soup. 
- The egg breaks & mingles with the soup. Cook for 5mins & switch off heat. 
- Garnish with spring onion, carrots & serve it as you like.  
Note: 
- Kimchi will have sufficient spiciness to it. If needed add extra or just omit adding it.
- You can add the whole egg instead of egg whites.

I served it with a egg white omelette & roti for lunch. It was filling & good.

Poached Egg Curry | Shakshouka | Anda Curry

Talking about poached egg they are just yummm to me.Aren't they ??? Call me crazy or whatever I Lovee Eggs...Just not that I do research on different recipes based with them too.While one of the researches I came across this Libyan recipe "Shakshouka". This is very much similar to Indian egg gravy but instead of boiled egg we add raw egg to pan & allow it to cook with the curry juices & steam.




Shakshouka with a Indian twist. 

Ingredients
2 Eggs 
1 Medium onion chopped 
2 Tomatoes cut in cubes
2 Green chilli's sliced
1 Garlic minced 
1 Tsp cumin powder
1 Tsp chilli powder
Corriander leaves finely chopped 
salt 
For a Indian twist I added a seasoning to the dish with... :) 
2 Tbs oil
1 Tsp mustard 
1 Tsp jeera 
1 Tsp channa dal 
1 Tsp Urad dal


Heat pan with oil add urad ,channa dal to pan & fry them till they turn light brown. Then add mustard & jeera to pan. Once mustard starts jumping add garlic, green chilli & onion to pan. Fry them till onion turns transparent. Then add tomato to pan with salt. Close pan with lid & allow tomato to cook. 
Once tomatoes are cooked add cumin powder & chilli powder along with 1/2 cup of water. Bring it to boil & break eggs directly in to pan.. Allow them to cook for 3 mins & switch off heat. Garnish it with coriander leaves & curry is ready to serve. 

* Serve with rice or roti... 

Note: 
1. If you want to you can cook them for some more time for a hard boiled yolk. 
2. Avoid adding green chilli's if you feel it's too spicy.

Kodi Guddu Kura | Ande Ki Sabji | Egg in Coconut Gravy


Long back when were moving from guest house to a apartment in Korea, I was too tired to make dinner because of all the shopping to the new home. Then my sweet hubby made me a beautiful dinner that I can never forget. He made few hard boiled eggs and sprinkled them with pepper & salt. Oh.. I just can't forget how yummy they were.. :) Though it is the most easiest thing you can do, but for me it is so precious. 
Coming to the curry the fried boiled eggs are dipped in a tomato coconut gravy along with garam masala powder & topped with cilantro. You can use either hard boiled or poached eggs for this curry. 

Prep Time-10min | Cook Time-30mins | Serves-2 to 3 people
Ingredients
4Hard boiled eggs 
1Big onion chopped 
1Tbs ginger garlic paste
3Big tomatoes chopped
2Tbs thick coconut milk {3/4Cup thin coconut milk}
2Tsp garlic chilli powder {Adjust as needed} 
1Tsp garam masala powder
1/4Tsp turmeric
Salt to taste 
1Tsp cumin 
1Tbs + 1Tsp oil 
Few coriander leaves to garnish
Fried Eggs
- Mean while heat another pan with 1tsp oil & a pinch of turmeric. 
- Then add boiled eggs & fry them for few seconds. 
- You can see some few blisters & also a nice crust will be formed on eggs.
- Switch off heat & allow them to cool. 
- Later cut the eggs in to half vertically as shown above in the curry. 
Making Curry
- Heat a pan with 1Tbs oil and add cumin to it. 
- After few seconds add add onions & ginger garlic paste to pan. 
- Fry them till onions are translucent.
- To the pan add tomatoes & cook with a closed lid. Cook tomatoes till they have turned soft. 
- Add turmeric, salt, garam masala & chili powder. 
- Add the coconut paste too pan & mix them well. 
- Adjust salt & spiciness if needed.Cook for 5mins on low heat.
- Now add the fried eggs to pan & cook them for few seconds in the gravy.
- Switch off heat & garnish with coriander leaves at end.
***Serve with rice, naan or roti.
