Okonomiyaki | Japanese Pancakes

Okonomiyaki is Japanese pancake made of eggs & flour mixed with few veggies, noodles & topped with a special sauce to complete the recipe. The name okonomiyaki means "As you like it" or "What to like it" & sure you can literally add anything you like. I have seen few recipe which kept on adding & adding lot of layers to this pancake. 
Okonomiyaki pancakes are topped with a special sauce named as Okonomiyaki sauce. But to customize it I followed the recipe below I mentioned & customized it to our taste buds. me & hubby like spicy things, so I added some sriracha sauce to kick some heat {Though it wasn't enough for us :)}. Try these breakfast pancakes, sure you will love them.

Prep Time-10mins | Cook Time-15mins | Serves-4large pancakes 
Ingredients 
4Eggs 
1/4Cup wheat flour {replace with all-purpose flour}
1Cup shredded cabbage 
2Carrots grated 
2Scallions chopped 
1Tsp salt 
2Tbs oil 
Okonomiyaki Sauce {Not the traditional sauce}
1Tsp soy sauce
1Tbs tomato ketchup 
1Tbs mayonnaise 
1Tbs dijon mustard 
2Tbs sriracha sauce
1Tsp honey 
- Mix in all the above ingredients & keep aside. Adjust the flavors if needed.
Garnish 
Few scallions chopped 
Few sesame seeds
Directions
- In a bowl whisk eggs & wheat flour to a smooth paste.
- To that bowl mix in cabbage, carrot, scallions & salt.
- Heat a non-stick pan with little oil & pour in the batter in to a circle form.
- Cook it completely on one side, till it is slightly brown & liquid on top of pancake is vanished. Then flip it to the other side. 
- Cook for few seconds or till it goes to light brown in color.
- Remove it from pan & repeat the same with rest of the batter.
- Lay a pancake in a plate & top it with okonomiyaki  sauce along with scallions & sesame seeds. 
Note
- Batter is thick & easy to handle. 
- Traditional okonomiyaki sauce consists of worcestershire sauce & it's not vegetarian. So I made this my own version of sauce.
- You can add in your choice of vegetables apart from the one's I added.

Ebelskiver ~ Danish Pancakes

Today I'm sharing a breakfast recipe from Denmark. To know what my other friends are cooking, check out the Blogging Marathon page for the other Blogging Marathoners doing BM# 44.
Ebelskiver are Danish cute little puffed pancakes, which are made using a special pan to get their shape. This pancakes can be served as breakfast, dessert or also as a snack. You can serve them with jam's, flavored butter or can top with any of your favorite fruits along with dried nuts. 
The basic recipe of ebelskiver, which I got from a cookbook included eggs in it. I tried replacing eggs & it worked out fine in this dish. The ebelskiver is very similar to paniyaram pan you get in India. Here I'm sharing a eggless version of these delicious pancakes you will love.

Prep Time-10mins | Cook Time-10mins | Yields-18ebelskivers
Ingredients
1Cup All-purpose flour
3Tbs sugar
Pinch of salt
1/2Tsp baking soda
1/2Tsp baking powder
1/2Cup yogurt
1Cup milk
1Tsp apple cider vinegar
1/2Tsp cinnamon powder
2Tbs butter
Topping
Few chopped almonds
2Tbs honey
Directions 
- In a bowl sieve flour, baking soda, baking powder & cinnamon powder. 
- In another bowl whisk sugar , salt, yogurt, milk & apple cider vinegar until sugar dissolves completely. 
- Now mix in dry ingredients with the wet ones. 
- Meanwhile heat the Ebelskiver pan. Rub the pancake holes with butter. 
- Fill in the holes with batter completely. Allow the batter to cook. You can see a crust formed & the edges are well done. 
- Now use a skewer & turn them to the other side. Allow them to cook completely on other side too.
- Now repeat the same with left over batter. 
- while serving top the ebelskiver with honey & almonds. Serve them warm.
Note
- If you are adding eggs, then omit apple cider vinegar from the recipe. 
- Adjust the sugar if you want it to be on sweeter side.
- Topping can be any of your choice.

Banana Almond Overnight Oatmeal

Breakfast is the important meal of the day & it should be healthy, nutritious & should also be the heaviest meal of your day.  Here I'm sharing a breakfast for healthier you, which can be made in no time & also satisfies your taste buds too. 
Banana Almond Overnight Oatmeal is a simple & tempting breakfast. This recipe can be customized according to your taste, where in oatmeal meal remains the same, while toppings can be changed accordingly.

Overnight Oatmeal with Mango & Almonds | How to Make No Cook Oatmeal

Prep Time- 8hrs | Serves-2people
Ingredients 
1Cup oats {old fashioned oats}
2Cups milk
5Tsp brown sugar
1/2Tsp vanilla extract
Few chopped almonds 
Banana pieces chopped 
1Tsp honey
Directions 
- Take 2 bowls & add 1/2 a cup of oats in each. 
- Add 1Cup milk in each bowl. 
- Add 1/4Tsp of vanilla extract in each bowl.
- Next add 2&1/2Tsp of sugar to each bowl. Mix them well.
- Close with a lid & allow them to sit in refrigerator overnight. 
- When you are ready to eat garnish with banana's & almonds.
- Drizzle honey & enjoy your break fast. 
Note
- You can replace vanilla extract with almond extract. 
- Instead of brown sugar you add regular white sugar. 
- You can double this recipe to accommodate more people.

Chocolate Coconut Rolls


Chocolate coconut rolls are made eggless with very interesting filling in them. These are similar to cinnamon rolls, which are sticky & yummy. 
Eggless - I followed a vegan recipe to eliminate eggs from them & loved them very well. 
Brown sugar - I always loved the taste of brown sugar & replaced normal sugar to it. I don't know if that had changed the color a little to the rolls but for sure they were very tasty. 
Glaze - The glaze was simple & I glazed it just for the pictures. I loved the rolls as they are. 
Prep Time-3hrs {rising time & making} | Cook Time-20-25mins | Yields-16 rolls

Ingredients 
4&1/4Cup all purpose flour
1/4Cup flour for dusting {use as needed}
1Pack instant yeast
1Cup milk
1/4Cup water {use as needed}
1/2Cup brown sugar 
1/4Tsp salt
6Tbs butter @ room temperature
1Tsp olive oil 
Chocolate Coconut Filling 
1/2Cup grated dry coconut
1/4Cup hershey's unsweetened chocolate powder
3/4Cup brown sugar 
2Tbs sugar
2Tbs butter melted 
Glaze 
1Cup powdered sugar 
2Tbs water

Making the dough
- Grease a big bowl with olive oil & set aside.
- In a bowl take milk & sugar. Dissolve sugar completely. 
- In a bowl take flour, salt, butter, yeast, milk & sugar mixture.
- Mix flour by adding little by little water as needed.
- Now dust the wooden board with flour. Knead flour for 10mins. 
- Place the dough in oiled bowl & cover it. 
- Allow dough to rise double of it's size. Time might vary but it will be ready in 1&1/2hrs. 
Making of filling & rolling 
- Grease a cooking pan with butter & set side
- Mix coconut, chocolate & sugar in a bowl.
- Transfer the dough on to a dusted wooden board. 


- Using a roll pin spread the dough equally in to a rectangular shape. 
- Brush the dough with butter & spread the chocolate coconut mixture equally. 


- Now roll it from side as shown in the figure. 
- Cut the dough in to 16 equal rolls.
- Now arrange the rolls into pan as shown above. 
- Allow the dough to raise for 30mins. 
Baking rolls
- Pre heat oven @350degrees. 
- Once the rolls are raised brush them with some butter. 
- Bake them @ 350 degrees for 20mins to 25mins or until they are lightly browned. 
- Remove roll from oven & allow them to cool. 
Glaze
- In a bowl mix sugar & water. Allow sugar to dissolve completely. 
- Spread the glaze on the cooled rolls. 
- Rolls are ready to serve.
Note
- You can add 1egg while making the dough. 
- For dough you can replace butter with olive oil.

Overnight Oatmeal with Mango & Almonds | How to Make No Cook Oatmeal


Overnight Oatmeal is a simple yet easy way of making your breakfast ahead of time. It is healthy & feels filling in your tummy. Breakfast is the main meal of the day & it is supposed to be heavier then lunch or dinner, so you should always love gobble on healthy breakfast.
The recipe I'm sharing includes old fashioned oatsmilkmango pieces & yummy almonds on top. I came across few recipes that used yogurt as well in the recipe. I'm sure going to use it in my next recipe, but for now enjoy this dish & don't skip your breakfast.


Prep Time-8hrs | Serves-2people
Ingredients
1/2Cup + 4Tbs oat {old fashioned oats}
1Cup milk {almond milk}
4Tsp brown sugar
1/2Cup finely chopped mangoes
Few almonds chopped for garnish
Directions
- Take 2 bowls. 
- Add 1/4cup + 2Tbs of oats in each bowl. 
- Next add 1/2 cup milk in each bowl.
- Now add 2tsp sugar in each bowl.
- Next add the 1/4cup chopped mango on them. 
- Now refrigerate them overnight. 
- While serving top the bowls with almonds.
Note
- You can play with flavors as you like. 
- The quantity of oats was sufficient & perfect for me. Adjust oats as needed.
- You can replace brown sugar with normal sugar.

Omelette in Mug

Omelette in Mug

Omelette in Mug - Yes, you read it right. I made an omelet in mug & it was awesome. I came across this recipe in a food site & decided on trying it. I like the traditional way of making omelet but, this way it reduces the make time & less messy too.
This omelette is made of egg whites, but you can also use a whole egg if you like. Egg whites are filled with protein & I love getting protein through food rather than powders. I avoided using oil in this dish & off course you are free to use it. If you want to use oil, grease the mugs with some oil as needed. Using a microwave simplifies & takes less time in cooking. In this dish we microwave it for just 2minutes & the omelette is ready.

Omelette in Mug

Prep Time - 5mins | Cook Time-2minutes | Serves-2people 
Ingredients 
5Egg whites
1/2cup finely chopped onions 
1Tsp red chilli powder {cayenne pepper}
pinch of turmeric
1/4Tsp garam masala powder {optional} 
Salt to taste
Few coriander leaves to garnish
Directions 
- In a bowl add above ingredients other than coriander leaves. 
- Mix them well. Adjust salt & spiciness if needed. 
- Take 2mugs & fill them up half the way. 
- Now microwave it for 1minute.  Take it out & mix the ingredients. 
- Now microwave for another 1minute.
- If you find any liquid then microwave again.
- Garnish with coriander & serve. 
Note
- Microwaving time varies with instrument. Adjust time as needed. 
- You can add veggies if you like. 
- Always use bigger mug. 
- Grease the mugs if you like to. 
- You can use whole egg with out discarding yellows.

Kande Poha {Version 2}

Kande Poha

Madhya Pradesh is situated in central part of India. The staple food are wheat, meat, rice & fish. They changed from region to region. The well know dishes from this state are korma, sabudana Kichiri, biryani, pilaf, dal bafla, milk based dishes & many more.
Kande Poha is a breakfast dish & it is served along with jalebi in Indore and Malwa regions. The fennel seeds added in the dish varies this dish from Maharashtrian style kande poha.


Kande Poha
Prep Time-10mins | Cook Time-15mins | Serves-1person
Adapted From : Desi Soccer Mom
Ingredients
1Cup thick poha {flattened Rice}
1small onion finely chopped
1Small potato finely chopped
2Green chili's slit into half
1/4Cup green peas 
1/2Tsp turmeric
1Tsp sugar
Salt to taste
1Tbs lemon juice {optional}
Few coriander leaves for garnish 
2Tbs coconut flakes for garnish
For seasoning 
1Tbs oil
1Tsp mustard seeds
1Tsp fennel seeds
Few curry leaves 
Directions
- Wash poha with water & drain any left over water. Keep aside. 
- Heat pan with oil. To that add mustards, fennel & curry leaves.
- Once the mustard starts jumping add onions & green chili's to pan. 
- Fry them translucent & add potatoes & green peas to pan. 
- Close pan with lid & cook till potatoes are cooked. 
- Check if potatoes are cooked. Then add turmeric, sugar, salt & poha to pan. Mix them well & adjust taste if needed. 
- Cook poha on low heat for 2min-3mins. Switch off heat. Mix lemon juice with poha.
- Garnish with coriander leaves & grated coconut.
Note
- As mentioned lemon juice is optional. Drizzling a little will boost the flavor of the dish.
- Recipe I followed used fruits like pomegranate & grapes as garnish.

Chilka Roti | Rice Roti | Chawal Ki Roti {Instant Version}

Chilka Roti

Jharkhand is one of the eastern states in India. It was part of Bihar until 2000 & later became an individual state. Rice is staple here & they make different variety of dishes using rice like roti, dhuska, pittha & many more. 
Chilka Roti is one of those dishes made of rice flour & besan. This dish is made for special occasions & enjoyed along with chana dal chutney. This dish is also similar to "Dosa" a South Indian dish. I made an instant version of this dish,but in general this dish is made of soaked rice, chana dal & grind to smooth batter. Enjoy the instant version of this dish as it is simple & consumes less time in making. 

Chilka Roti
Prep Time-45mins | Cook Time-15mins | Serves-8to9 roti

Ingredients 
1Cup Rice flour 
3/4Cup besan {Gram flour}
2Cups water
2Green chili's minced 
1Tsp jeera 
Salt to taste
1Tbs oil or as needed
Directions 
- In a bowl mix all the ingredients other than oil. Adjust salt if needed. 
- Cover it & let it sit for 30min. 
- Heat a non-stick pan. Brush a little oil to pan. Then take a ladle full of batter & roll it on pan. Spread batter thin & brush ends with little oil. 
- Cook for 20sec & then lift it from the edges moving towards the center. Flip the roti & cook on other side. 
- Repeat the same with rest of the batter.
- Serve warm with chutney.

Quick Oatmeal with Honey & Dates

Sharing a recipe of simple & easy breakfast to start a day in healthier way. 


Ingredients 
1/2 Cup old fashioned oats 
1/2 Cup milk 
2 Tbs. honey
3 Tbs. finely chopped dates
1 Tbs. chopped almonds 


- In a microwave safe bowl add oats & milk. Microwave it for 2 to 3mins. Check if the oats are cooked or not. If not cook for another 2mins.
- Add honey & dates to the oatmeal & mix them well.
- Top with almonds & enjoy it.


Note:
- Adjust the honey sweetness if you need.
